Ch icken breasts, boned (4 pcs.) 2 eggs 1/2 c. bread crumbs 2 tbsp. oil 2 tbsp. butter 4 slices Muenster cheese 1/2 lb. fresh mushrooms, sliced 2 tbsp. sherry Flatten chicken breasts and dry well. Beat eggs. Coat chicken with crumbs, dip into eggs, then coat with crumbs again. Chill for 15 minutes. Brown pieces in skillet in mixture of oil and butter. Place chicken into slightly oiled baking dish. Sprinkle sherry over chicken. Cover with sliced mushrooms, then the cheese. Bake until cheese bubbles, 350 degrees. |
