PARKERHOUSE ROLLS 
2 c. milk
3 tbsp. butter
1 tsp. salt
3 tbsp. sugar
1 yeast cake or pkg. yeast
1/4 c. warm water
Approximately 5 1/2 c. flour
1/2 stick melted butter
Sugar and orange rind mixed together (optional)

Bring 2 cups milk to a boil. When hot, add butter, salt and sugar. Put yeast and warm water and 1 teaspoon sugar aside to rise. When the milk mixture is warm to touch, add yeast mixture and 2 1/2 cups flour. Beat well with spoon and set aside to rise. When to top of the pan, beat the mixture down and add 2 more cups of flour or more until elastic like.

Let rise again until double in size. Turn out on a floured board and knead some. Roll out with a rolling pin until 1/2 inch thick. Spread with melted butter; sprinkle on sugar and rind, if you want. Cut with a 3-inch round cookie cutter.

Fold in half with butter to inside and pinch the edges together. Put on greased cookie sheet with pinched edges up, side by side. Cook in 400 degree oven for 10 minutes until golden brown. Can brush with melted butter when comes out of the oven.
