ED'S CHIPPED BEEF GRAVY 
Melt 1 stick real butter in 12" cast iron skillet. Add 8 to 12 tablespoons flour. Stir in flour on medium heat. Cut up 6 or 8 ounces dried beef. Add to flour-butter mixture and stir in for 2 or 3 minutes. Add 5 cups milk. Heat until thick. Serve on toast or biscuits.

My whole family loves chipped beef gravy and my mother inlaw gave me the recipe but one thing she does I find that no one does but its awesome is peas to it after after everything is done. Then we put it over mashed potatoes. Try it it will be the best for the whole family. We hardly every have any left overs.

I looked at several recipes and they all said to rinse the beef in warm water and drain; don't add salt. I used this recipe but rinsed the beef. It was rather bland although I added lots of pepper. After I added salt, it was fine but I wonder if the rinsing didn't remove some of the flavor too. Next time I'll pass on the rinse. Although I'd grown up during the time that this was a common dish for "supper", I'd never made it myself. Not bad.
