NEW YORK CHEESE CAKE | |
Butter sides and bottom of 10 inch spring form pan. CRUST: 2 c. Zwieback crumbs 1/2 c. confectioners' sugar 1 tsp. grated lemon peel 1 stick butter Press crumbs firmly with fingers to bottom and sides of pan. FILLING: 3 lbs. soft cream cheese 1 tsp. grated lemon peel 1 tsp. vanilla Add gradually, blend smooth after each addition. 1 1/3 c. + 8 tsp. sugar 3 tbsp. flour Beat together and add gradually to cheese, beating smooth after each addition. 5 eggs 2 egg yolks 5 tbsp. heavy cream Bake at 250 degrees for 1 3/4 hours. Turn oven off, let stand in oven 1 hour longer. Cool completely. Chill overnight. Serves 12-14. |
