VEGETABLE PUFF 
2 (10 oz.) pkgs. broccoli
3 eggs, separated
1 tbsp. all-purpose flour
1 c. mayonnaise
Nutmeg
1 tbsp. butter
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. plus 1 tbsp. grated Parmesan cheese

Cook broccoli and drain. Beat egg yolks. Add 1 tablespoon flour to yolks and mix well. Add nutmeg, mayonnaise, butter, salt and pepper to egg-flour mixture. Stir in broccoli. Beat egg whites until stiff. Fold cheese and egg whites into broccoli mixture. Pour into buttered 9 inch pan. Bake at 350 degrees for 30 minutes.
