SOUTHERN STYLE BANANA PUDDING 
1 pkg. (4 servings) vanilla or banana cream pudding mix (reg. or instant)
2 c. skim milk or 1% milk
32 vanilla wafers
3 bananas, sliced
3 egg whites, room temperature
1/2 tsp. vanilla
1/8 tsp. cream of tartar
1/4 c. sugar

Prepare pudding according to package directions, substituting skim or low fat milk for the whole milk.

Arrange half the vanilla wafers in bottom of 8"x8"x2" square baking dish. Top with half the bananas, then half the pudding. Repeat with layer of remaining wafers, bananas and pudding.

Beat whites, vanilla and cream of tartar in medium size bowl at high speed until soft peaks form. Add sugar gradually, beating until stiff peaks form. Spread meringue evenly over pudding, spreading to edge of dish to seal.

Bake in preheated moderate oven at 350 degrees for 10 to 15 minutes or until golden brown.
