ICE CREAM DELIGHT 
1/2 gallon vanilla ice cream
2 pkgs. instant coconut pudding mix
60 Ritz crackers, crushed
Cool Whip
1 c. milk

Let ice cream soften enough to mix with instant pudding mix and milk. Melt 2 tablespoons butter in bottom of large casserole dish. Sprinkle with cracker crumbs. Pour in ice cream mixture. Top with whipped cream and sprinkle 1/4 cup crackers on top. Refrigerate overnight.
