ZUCCHINI BREAD 
3 eggs
1 c. Crisco oil
1 1/2 c. sugar
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
1/2 tsp. baking powder
1/2 tsp. nutmeg
1/2 c. nuts
2 c. grated zucchini

Beat eggs, oil and sugar together. Mix dry ingredients together and add gradually. (It is easier to stir when added gradually.) Add zucchini and nuts and mix well.

Pour into two greased and floured loaf pans. (I use the foil pans, size 7 7/8 x 3 7/8 x 2 1/2.) Bake 1 hour at 350 degrees. (This is a good freezer bread.)
