BEEF CANTONESE 
1 1/2-2 lb. stew meat (cut into sm. pieces)
1/4 c. chopped onion
2 tbsp. oil
1/3 c. soy sauce
1/2 tsp. ground ginger
2 c. chopped celery
1 c. sliced water chestnuts
1 green pepper, cut into strips
3 carrots, thinly sliced
2 tbsp. cornstarch mixed in 1/4 c. water

Brown meat and onion in oil. Add 1 1/2 cups water, soy sauce and ginger. Simmer 10 minutes. Add celery, chestnuts, green pepper and carrots. Simmer 50 minutes or until vegetables are tender. Add cornstarch mixture. Serve over rice.
