SHREDDED DUCK OR CHICKEN SALAD 
2 tbsp. red wine vinegar
2 tbsp. sugar
2 tbsp. sesame seed oil
2 tbsp. soy sauce
1 tsp. prepared mustard
1 c. shredded carrot
1 c. peeled and diced cucumber
1 c. shredded cabbage
1 lb. roast duck or chicken meat, shredded

Combine vinegar, sugar, sesame seed oil, soy sauce and mustard in a bowl; mix thoroughly. Arrange the vegetables on a serving plate. Put the shredded duck or chicken on top. Pour the dressing over the meat and vegetables just before serving. Serves 4.
