MICROWAVE SANTA FE CHICKEN 
4 half chicken breasts, boned, skinned and cubed
6 slices bacon
1 green pepper
1 red pepper
1 med. onion, chopped
1/2 tsp. chili powder
1/2 tsp. garlic powder
3-4 tbsp. chopped parsley

On a microwave plate, lined with paper towels, place bacon. Microwave at HIGH power for 1 to 1 1/2 minutes or until crisp. Remove from oven and paper towels. Place onions, chicken pieces, and peppers in a micro-safe dish. Microwave at HIGH power for 4-5 minutes, stirring at least once and turning dish during cooking time. Let rest for 3-4 minutes. Add spices. Stir to blend. Microwave again at HIGH power for another 2-4 minutes or until chicken is cooked through. Peppers can still be crispy. Crumble bacon over dish and sprinkle with chopped parsley. Serve. Makes 4-5 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
