HEALTHY BANANA BREAD 
1 1/4 cups all-purpose flour
1 1/4 tsp. baking powder
1/2 tsp. baking soda
2 1/2 tsp. cinnamon
heavy dash of nutmeg
1/8 tsp. salt
1 1/2 cups mashed bananas
2 slightly beaten egg whites
3/4 cup sugar
1/4 cup oil (I use applesauce)
3 tsp. vanilla
non-stick cooking spray (Pam)

In a bowl, mix together flour, baking powder, baking soda, cinnamon, nutmeg and salt.

In larger bowl mix together bananas, egg whites, sugar, oil (or applesauce) and vanilla. Stir in flour mixture until moistened. Pour into sprayed 8x4x2-inch loaf pan.

Bake at 350°F for 45 to 50 minutes or until toothpick comes out clean. Cool bread in pan for 10 minutes. Remove from pan and enjoy!
