OATMEAL BANANA BREAD 
1 3/4 c. all-purpose flour
1 1/4 c. quick cooking oats
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
3 eggs
3/4 c. sugar
1/3 c. vegetable oil
1 tsp. vanilla
1 1/2 c. mashed ripe banana (about 3 med.)
3 tbsp. milk
1/4 c. chopped walnuts or pecans

Stir together flour, oats, powder, salt and soda; set aside. Beat eggs; add sugar, oil and vanilla; mix well. Combine banana and milk. Add banana mixture to egg mixture alternately with dry ingredients. Stir in nuts. Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 55-60 minutes, or until a toothpick inserted in the center comes out clean. Cool in pan 10 minutes. Remove from pan, cool completely on wire rack. Wrap and store overnight for easier slicing. Makes 1 loaf.
