ARTICHOKE QUICHE 
1 pkg. frozen artichoke hearts or 1 can of plain artichoke hearts (NOT marinated)
2 eggs
1/4 tsp. crushed tarragon
1/4 tsp. nutmeg
1/2 tsp. salt
1 1/2 tbsp. melted butter
1/2 tbsp. flour
1 c. half & half
1/2 lb. Swiss cheese, sliced
1 uncooked pie crust

Layer hearts (break apart) and cheese slices in raw pie crust. There will be 4 layers with hearts on bottom, next cheese, then hearts and finishing on top with cheese. Beat and pour remaining ingredients over top. Bake at 375 degrees for 40 minutes until top is browned. Let set for several minutes before cutting.
