BROCCOLI CASSEROLE 
20 oz. chopped broccoli, cooked
2 c. cooked rice (Minute)
1/2 c. chopped onion
1 c. chopped celery
4 oz. grated cheddar cheese
2 tbsp. plus 2 tsp. butter
1 c. water
2 pkgs. chicken broth seasoning (can substitute chicken bouillon cubes or granules to equal)
1 tbsp. plus 1 tsp. cornstarch
1/2 c. evaporated milk
8 oz. cooked & chopped chicken
Salt & pepper to taste

Cook onion and celery in small amount of water until tender, drain well. Mix cooked broccoli, rice, onion and celery in large bowl; set aside. Melt butter in small pan.

Stir together chicken broth seasoning and cornstarch; mix well and add to butter; stir in water. Mix well until smooth and cook until slightly thickened; add to broccoli mixture. Stir in milk, chicken, salt, pepper and 3 ounces cheese. Pour in large casserole dish sprayed with Pam. Sprinkle remaining 1 ounce cheese on top. Bake at 350 degrees for 30 minutes.
