FRESH TOMATO SOUP | |
1/4 c. butter 1/2 c. chopped onion 1/4 c. flour 1 c. water 6 med. tomatoes, peeled and diced 1 tbsp. minced parsley 1 tsp. salt 1 tsp. sugar 1/2 tsp. dried thyme 1/4 tsp. pepper 1 bay leaf (optional) Heat butter in a large saucepan and cook onion until tender. Blend in flour. Gradually stir in water. Stir in remaining ingredients. Bring to a boil, stirring constantly. Reduce heat and simmer, covered, for 30 minutes, stirring frequently. Add water or milk to thin if desired. Serve garnished with lemon slices or parsley sprigs if desired. Serves 2-4. |
