JALAPENO CORNBREAD 
3 c. self-rising meal
2 1/2 c. buttermilk
1/2 c. salad oil
3 eggs, beaten
1 large onion, grated
2 tbsp. sugar
1 c. cream-style corn
1/2 c. chopped jalapeno chili peppers
1 1/2 c. yellow cheese, grated
1/4 lb. bacon or more, fried and crumbled
2 cloves garlic, minced
1/4 c. pimentos, chopped

Mix all ingredients together well.

Bake at 400°F for about 35 minutes or until done. (You may not want to use 1/2 cup of jalapeno until you get it as hot as you like.)
