ORANGE - COCONUT PIE 
1/4 c. butter, softened
1 c. sugar
3 eggs, beaten
1/2 c. orange juice
1 tsp. lemon extract
Dash of salt
1 c. flaked coconut
1 unbaked (9 in.) pie shell

Cream butter; gradually add sugar, beating well at medium speed of an electric mixer. Add eggs and beat. Stir in orange juice, lemon flavoring, salt, and coconut, mixing well. Pour into pie shell. Bake at 350 degrees for 45 to 50 minutes or until a knife inserted in center comes out clean.
