COCONUT ZUCCHINI BREAD 
3 eggs
2 c. sugar
1 c. oil
3 c. zucchini, grated
2 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1 c. coconut, flaked
1 c. chopped nuts; optional

Preheat oven to 375 degrees. Grease two 9 x 5 loaf pans. In a large bowl, beat together eggs, sugar, and oil. Mix in zucchini and vanilla. Add flour, salt, baking soda, baking powder, and cinnamon. Mix well. stir in coconut and nuts. Pour batter evenly into loaf pan. Bake for 50-60 minutes or until done. This freezes well.
