ZUCCHINI BREAD 
3 eggs
1 c. oil
2 c. sugar
2 c. grated zucchini, peeled
3 tsp. vanilla
2 1/4 c. flour
1 tsp. salt
2 tsp. cinnamon
2 tsp. baking soda
1 c. chopped nuts (optional)

Beat eggs until fluffy. Add oil, sugar, zucchini and vanilla. Sift together rest of dry ingredients and add to egg mixture. Add nuts if desired. Mix well. Bake in two loaf pans for 45-60 minutes at 350 degrees. Makes 2 loaves.
