FRESH APPLE CAKE 
2 c. sugar
1 1/2 c. cooking oil
2 tsp. vanilla extract
2 well beaten eggs
Juice of 1/2 lemon
1 tsp. salt
3 c. flour
1 1/4 tsp. baking soda
3 c. peeled and chopped apples
1 1/2 c. chopped nuts

Combine sugar, oil, vanilla, eggs, lemon juice, and salt in mixing bowl. Beat well. Mix flour and soda; add to first mixture and mix well again. Add apples and pecans. Mix well. Bake in a tube pan which had been greased and dusted with flour. Bake 1 1/2 hours at 325 degrees.
