CHILI CON QUESO 
1 lb. Velveeta cheese
1/4 - 1/2 c. salsa (you determine how hot)
Taco chips (light corn are the best)

(Instead of chunky salsa, you can use chopped canned tomatoes, drained and chopped jalapeno chilies to taste.)

Melt cheese and put in chafing dish or fondue dish. Add salsa to taste. Serve with taco chips for dipping.
