BEAN AND CORN CASSEROLE 
1 med. onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 tbsp. oil
1 tsp. cilantro
3 c. beans, cooked
2 c. corn
3 1/2 c. tomatoes (29 oz. can), crushed
1/2 c. cheese, grated (soy)

Saute onion, garlic and pepper in the oil. Mix with beans, corn, tomatoes and cilantro in casserole. Salt to taste and top with cheese and cover. Cook 35 to 40 minutes at 350 degrees or 15 minutes in microwave, turning every 5 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
