FRIED SCALLOP MANTLES 
Scallop mantles (as many as you can get)
Salt
Wheat flour
Oil
Garlic salt, onion salt or any other flavoring you like

Separate the mantles from the rest of the tissues, and wash them. Put them in a bowl with fresh water and add 5 tablespoons salt. Let them soaking for a couple of hours and wash them again. Repeat until the mantles are white, and drain excess of water. Dry with paper towel, and put in a little bit of flour (if you like).

Deep fry in hot oil until crispy, drain excess of oil with paper towel, and sprinkle salt or any powder flavoring on them. Serve alone or mixed with salted peanuts. To keep them crispy, store in a closed bowl.
