PEACH UPSIDE DOWN CAKE | |
3/4 c. packed brown sugar 2 sticks butter 1 (29 oz.) can sliced peaches, drained 2 1/4 c. all-purpose flour 1 tbsp. baking powder 2 tsp. cinnamon 1 1/2 c. sugar 3 lg. eggs, separated 3/4 c. milk 1 1/2 tsp. vanilla Combine brown sugar and 1/2 stick butter, melt, stirring to combine. Spread on bottom of 9-inch round pan. Arrange peaches over sugar in circle. Combine flour, baking powder and cinnamon. Beat rest of butter with sugar until creamy, beat in egg yolks, alternately beat in flour mixture with milk and vanilla. Beat until well blended. Beat egg whites to stiff peaks. Fold egg whites into batter, spread over peach slices. Bake at 350 degrees for 55-60 minutes. Cool on rack 10 minutes. Turn cake on plate. |
