BRAN MUFFINS | |
1 c. wholewheat bran 2/3 c. milk 1 c. all purpose flour 1/4 c. sugar 1 tbsp. baking powder 1/2 tsp. salt 1/4 c. shortening 2 eggs, beaten 1 c. overripe mashed bananas, 2 medium Preheat oven to 425 degrees. In small bowl combine bran and milk; set aside. Grease 12 (2 1/2 inch) muffin cups. In medium bowl combine dry ingredients mix well. Cut in shortening until mixture resembles coarse crumbs. Stir eggs into bran and milk; add along with mashed banana to dry ingredients stirring just until moistened. DO NOT OVERMIX. Spoon batter into pan, filling each cup 3/4 full. Bake 20 to 25 minutes. Cool 5 minutes in pan before removing. Makes 12 about 145 calories each. |
