SHRIMP AU GRATIN 
1 lg. white onion & several green onions
3 ribs celery
1/2 lb. butter
4 tbsp. flour
1 lg. & 1 sm. can Carnation milk
2 egg yolks
2 lb. boiled shrimp or crabmeat
10 oz. yellow cheese, grated

Chop onions and celery; saute in butter until soft. Add flour and blend. Add milk and blend. Remove from heat. Add egg yolks, shrimp or crabmeat, salt and pepper to taste. Stir in grated cheese. Put in individual or large casserole and sprinkle top with cheese. Bake at 350 degrees about 15-20 minutes. Serves 6-8.
