ROSIE'S BAKED POTATO SURPRISE 
1 (8 oz.) pkg. cream cheese
3/4 lb. butter
1 (16 oz.) sour cream
1/2 tsp. pepper
1 tsp. salt
5 lbs. red potatoes, baked or boiled, peeled
1 lb. bacon, cooked and drained
1 lb. broccoli
1 lb. mushrooms
4 tbsp. butter
12 oz. grated Cheddar cheese
12 oz. grated Mozzarella
1/2 c. Parmesan

Need at least a 15 x 9 1/2 x 1 1/2 inch pan.

Mash potatoes, cream cheese, 3/4 pound of butter, sour cream, salt and pepper. Micro-cook broccoli, mushrooms and 4 tablespoons butter until vegetables are tender. Layer potato mixture, vegetables, bacon and cheeses twice. Bake at 350 degrees for 45 minutes.
