ZUCCHINI - BUTTERSCOTCH BARS
WITH CARAMEL FROSTING
 
3 c. flour
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1/8 tsp. nutmeg
1/8 tsp. cloves
3/4 c. butter
1 c. brown sugar
1/2 c. sugar
1 tsp. vanilla
2 eggs
2 c. peeled & grated zucchini
1/2 c. walnuts
1/2 c. butterscotch chips

Sift together dry ingredients and set aside. Beat sugars, butter, vanilla and eggs until creamy. Mix in dry ingredients. Stir in remaining ingredients. Pour in greased and floured 10 x 15 inch pan. Bake at 375 degrees for 20 to 25 minutes.

CARAMEL FROSTING:

1/2 c. butter
1 c. brown sugar
1/4 c. milk
1 to 1 1/2 c. powdered sugar

Melt butter. Add brown sugar and boil for 2 minutes. Add milk and bring to a second boil. Remove from heat. Add enough powdered sugar to spreading consistency.
