MACARONI AND CHEESE CASSEROLE 
7 oz. macaroni, cooked and drained
8 oz. shredded sharp cheddar cheese
1 can low sodium cream of mushroom soup
1 (6 oz.) can sliced mushrooms, drained
3/4 c. milk
1/4 c. chopped onion
1/4 c. chopped pimento
1/4 c. chopped green pepper
4 oz. rich round cheese crackers, 1 1/2 c.

Combine macaroni, cheese, soup, mushrooms, milk, onion, pimento, green pepper, and 1 cup cracker crumbs. Turn into 2 quart casserole dish. sprinkle with remaining cracker crumbs. Bake 45-50 minutes at 325 degrees. Garnish with green pepper rings, if desired. Serves 8.
