JORDAN MARSH BLUEBERRY MUFFINS 
1/2 c. soft butter
1 c. sugar
2 eggs
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
1 tsp. vanilla
2 1/2 c. blueberries
Sugar for sprinkling

Preheat oven to 375 degrees. In a large mixing bowl, cream butter, sugar and eggs. Sift dry ingredients together and add alternately with milk and vanilla to the creamed mixture. Fold berries into the batter and spoon into greased muffin pan. Sprinkle with sugar and bake 30 minutes.

Leave the muffins in the muffin tin 3-5 minutes after baking and they'll be easier to remove from the pan.

My version of this recipe has you smash a half cup of the blueberries and mix this into the batter before you fold in the rest of the berries.
