LEMON FRUIT CAKE | |
1 lb. butter 1 lb. box light brown sugar 6 eggs, well beaten 3 1/2 c. flour 2 tsp. baking powder 1/2 tsp. salt 4 oz. lemon extract 1/2 lb. candied cherries 1/2 lb. candied pineapple 1 lb. pecans Put extract over fruit and let stand while creaming butter and sugar. Add well-beaten eggs, mix. Add remaining ingredients, mix. Divide into 3 greased loaf pans. Bake at 300 degrees for 1 hour with a pan of water on the lower shelf to keep cake moist while baking. |
