CRUNCHY TACOS | |
corn tortillas extra virgin olive oil (EVOO) 1 (8 oz.) block cheddar cheese (Cracker Barrel) 1 (15 oz.) can refried beans (Rosarita) any fruits and vegetables (onions, tomato, cilantro, etc.) 1 (1 lb.) pkg. ground beef Tortillas: Cover bottom of pan with oil. Put 1 corn tortilla on pan at a time. Cook over medium heat. Cook till tortilla bubbles up. Let oil drip off then dry in paper towel. Cheese: Grate desired amount of cheese. Beans: Cover bottom of pot with water (any temp). Put beans in pot and stir. Done when hot. Ground Beef: Put into pan. Crush up into small pieces. Done when turns brown. Fruits and Vegetables: Chop up into small pieces. Then put altogether and serve! Submitted by: Christy and Brian Coyne |
