BEEF SALAMI 
2 lbs. raw hamburger
1/2 tsp. black pepper
2 tsp. mustard seed
1/2 tsp. onion powder
1/2 tsp. garlic powder
1/2 tbsp. liquid smoke
2 tbsp. Morton's Tender Quick salt (not table salt)

Mix the ingredients well and pack solid in a roll. Wrap in aluminum foil. Refrigerate for 24 hours. Place the foil wrapped roll in large pan and cover with 2 cups boiling water. Bake in 375 degree oven for 1 1/2 hours. Remove from pan and place on rack to cool. Refrigerate until serving.
