PEIROGI CASSEROLE 
10-12 potatoes, cooked & mashed
2 onions, diced
1 stick butter
3/4 lb. Cheddar cheese, shredded
Lasagna noodles, cooked
16 oz. can sauerkraut, drained & rinsed

Cook onions in butter until soft. Put 1/3 in the potatoes, along with the cheese (with a mixer). Add half the sauerkraut to the potatoes. Salt and pepper to taste. Put noodles in the bottom of 9 x 13 inch pan. Put 1/2 the potato mixture; then noodles; then other 1/2 potatoes then noodles. Add rest of onion and butter to other half of sauerkraut and pour over noodles. Cover with foil. Let heat through 30-40 minutes at 300 degrees.
