MASHED SWEET POTATO PIE 
4 lg. sweet potatoes
1 cube butter
1/2 c. half & half
1 tsp. salt
Paprika

Heat oven to 400 degrees. Clean potatoes and pierce skins with knife. Wrap in foil. Bake 1 hour and 20 minutes until very tender.

Unwrap potatoes. Use a fork to peel skins off hot potatoes. Mash the potatoes with 3/4 cube of butter, the half & half as needed and the salt. Spoon potatoes into casserole dish. Wet a serving spoon with water. Press into potatoes to make scalloped edges.

Melt remaining butter. Drizzle over potatoes. Sprinkle with paprika. Bake 30 minutes at 350 degrees.
