POTATO PIE 
1 tbsp. + 1 tsp. reduced calories butter
10 oz. pared baking potatoes, cubed
1 c. skim milk
1 c. egg substitute
1 c. frozen peas
1/2 c. chopped scallions
1 1/2 oz. cubed cheddar cheese
2 slices turkey bacon (30 calories per slice), diced
1/4 tsp. salt

1. In a 10 inch pie plate, microwave butter on high 30 seconds until melted. Stir in potatoes; cover and microwave on high 8 to 10 minutes, stirring once, until tender. Set aside.

2. In medium bowl, microwave milk on high 1 minute. Gradually whisk in egg substitute; stir in remaining ingredients. Pour milk mixture over potatoes. With vented cover, microwave on medium 15 minutes or until set. Rotating dish halfway through cooking, microwave 3 minutes on high longer. Let stand 10 minutes. 209 calories per serving. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
