PERSIMMON CAKE 
3/4 lb. butter
2 1/2 c. sugar
3 eggs
3 c. all - purpose flour
3 tsp. cinnamon
2 tsp. allspice
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
2 c. nuts (I use walnuts)
1 c. raisins
2 c. persimmon pulp

Cream butter with sugar. Add eggs, then persimmon. Sift flour with cinnamon, allspice, baking soda, baking powder and salt. Mix well. Add nuts and raisins. Bake in greased tube pan 1 hour 20 minutes at 350 degrees. May top with powdered sugar and lemon juice icing.
