BUCKEYES (CANDY) | |
1 stick softened butter 18 oz. jar creamy peanut butter 1 tsp. vanilla About 1 lb. confectioners' sugar Cream first 3 ingredients, adding confectioners' sugar until desired consistency. (I melt butter in microwave, then mixture is crumbly. Then I refrigerate before attempting to dip in chocolate.) 1 tbsp. shortening Melt over low heat in double boiler. (I melt in microwave, then sit in kettle of water over low heat on stove while dipping.) Roll candy mixture into 1 inch balls and dip into chocolate with toothpick, leaving small opening, so they look like buckeyes. A family favorite! |
