MOTHER'S CARROT CAKE 
1 1/2 c. raisins
2 c. sugar
2 c. boiling water
5 tbsp. shortening
2 c. carrots, grated

Simmer together. Cool hot mixture before adding: 1/2 tsp. salt 1 tsp. baking soda 1 tsp. cloves 2 tsp. cinnamon 1 c. nuts, chopped

Mix together and bake in 2 loaf pans at 350 degrees for 55 minutes.

This recipe was by mother's from her mother, my grandmother. They called it depression cake because it takes no eggs.
