CHICKEN ANY VEGETABLE STEW 
1 1/2 lbs. boneless chicken meat (can use white or dark meat)
1 med. can stewed tomatoes
3 or 4 potatoes, cut into pieces
2 or 3 carrots, scrubbed & sliced
1 med. onion, chopped
2 stalks celery, chopped
1/2 frozen peas or green beans
Salt & pepper
Flour & water

Cut chicken bite-size. Brown slowly in a little oil. Add tomatoes and 1 tomato can water. Heat to boiling. Add carrots, onion, celery and potatoes. Lower heat and cook until potatoes are tender. Mix a little flour with water and thicken stew as desired. Season with salt and pepper to taste. Add beans or peas, simmer for 5 minutes. Sprinkle with dried parsley and serve.
