MINI CHEESECAKES 
24 vanilla wafers
24 cupcake liners
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs
1 tbsp. lemon juice
1 tsp. vanilla
Nuts (opt.)
Thank You pie filling

Line pans with cupcake liners. Put a vanilla wafer in bottom of each liner. Beat cream cheese, sugar, eggs, lemon juice and vanilla with electric beater until light and fluffy, 5 to 10 minutes. Fill liners 3/4 full with mixer. Bake in preheated 375 degree oven for 15 to 20 minutes or until set. Put filling and nuts on top. Keep refrigerated.
