QUICK VEGGIE SOUP 
1 (16 oz.) pkg. frozen mixed vegetables
1 (1 oz.) env. onion soup mix
1 (46 oz.) can cocktail vegetable juice
1 lb. lean ground beef
Cubed potatoes (as desired)

Combine first 3 ingredients (potatoes if desired) in a Dutch oven and bring to a boil. Cook ground beef in a skillet until meat is browned. Drain meat. Stir meat into vegetable mixture, reduce heat and simmer 20 minutes. Makes 2 quarts.
