BAKED SALMON WITH CRUMB TOP 
10-12 lbs. salmon
3 c. fine bread crumbs
1 c. melted butter
1 sm. onion, finely chopped
Juice of 2 lemons
Salt and pepper to taste
Seafood seasoning to taste

OPTION: Slice onion in rings and place in cavity.

Clean and scale salmon. Place whole fish on baking sheet and put in 450 degree oven for 10 minutes. Remove from oven and peel off skin. Salt lightly and add crumb mixture (all above ingredients save fish), patting over top and sides of fish. Bake at 350 degrees for 12 minutes per pound, until fish flakes easily. Garnish with lemon, if desired.
