APRICOT PORK ROAST | |
1 (4 lb.) rolled boneless pork roast 1 tsp. salt 1/4 tsp. pepper 1/4 c. brown sugar 1 c. apricot preserves 1 med. can apricot halves Place roast, fat side up in roasting pan. Sprinkle with salt and pepper. Bake at 325 degrees for about 30-40 minutes per pound. About 45 minutes before serving, spread mixture of brown sugar and preserves over roast. Continue to cook until done. Remove roast and stir apricot halves into drippings. Slice roast and spoon pan drippings over for serving. |
