SEAFOOD GUMBO 
1 tbsp. vegetable oil
2 onions, coarsely chopped
3 tomatoes, skinned and coarsely chopped
1 clove garlic, minced
2 sprigs parsley, chopped
1 tsp. thyme
2 c. chicken bouillon
1 lb. sole fillets, cut into 2 inch pieces
1 lb. shrimp
3 ribs celery, sliced
2 c. frozen, cut okra
1/4 c. tomato paste

Heat cooker, add oil and saute onions. Stir in tomatoes, garlic, parsley, thyme, and chicken bouillon. Close cover securely. Place pressure regulator on vent pipe and COOK 3 MINUTES with pressure regulator rocking slowly. Let pressure drop of its own accord. Place fish, shrimp, celery and okra in cooker. Close cover securely. Place pressure regulator on vent pipe and COOK 1 MINUTE with pressure regulator rocking slowly. Cool cooker at once. Gently stir in tomato paste and simmer, uncovered, to thicken. Garnish with crab, if desired. 8 servings.
