CARAMEL FUDGE BALLS 
1 c. walnuts, finely chopped
1/4 c. butter
1 c. brown sugar, packed
1 tsp. vanilla
1 c. sugar
3/4 c. sour cream
1/4 tsp. salt

Chop 1/2 cup of nuts very fine and 1/2 cup medium size. Melt butter in pan. Add sugar, salt and sour cream. Cook over low heat; stir until completely dissolved. Cover, boil slowly 5 minutes. Uncover, cook fast without covering or stirring to 236 degrees (soft ball stage). Remove from heat. Cool to lukewarm. Add vanilla, beat until creamy, stir in medium size nuts. Shape into balls, place on wax paper. Roll in fine nuts. Let stand until firm. Makes 24 balls.
