ORANGE CARAMEL FUDGE | |
3 c. sugar 1/2 c. hot water 1 c. evaporated milk 1/4 tsp. salt 4 tbsp. butter 2 tsp. grated orange rind 1 c. nuts Put 1 cup sugar in heavy sauce pan. Cook and stir over medium heat until sugar is melted and golden colored. Add water and stir until sugar is dissolved. Stir in remaining sugar, milk and salt. Cook over low heat stirring occasionally until mixture reaches 242 degrees on candy thermometer. Remove from heat. Add butter, orange rind and nuts. Beat until thick and creamy. Turn onto greased aluminum foil pan. Cool. Mark into squares. Yields 1 1/2 pounds. |
