LUNCHEON SALAD 
1 lb. smoked turkey (or salmon, ham, etc.)
1/2 c. tomato
1 c. diced cucumber
1 c. cooked peas
3/4 c. diced celery

SAUCE:

1/2 c. cholesterol free mayonnaise
1 tbsp. sugar
2 tbsp. lemon juice
Salt & pepper, about 1/4 tsp.

Toss all ingredients together. Chill. Serve on lettuce leaf, if desired.
