MEXICAN MEAL-IN-ONE CASSEROLE | |
1 lb. ground beef 1/4 to 1/2 c. onion 1 can Rotel chile 1 lg. can kernel corn 1 lg. can cream corn Grated Cheddar cheese 1 box Jiffy white corn bread mix Brown ground beef in skillet and drain; add onions (optional) and Rotel chile and simmer; drain excess liquid); add kernel corn, drain, and cream corn and simmer; remove from skillet to large casserole; sprinkle on cheese covering the top of contents. Make corn bread using the Jiffy mix (add a little more milk to increase amount of mixture); add cornbread mixture to contents and level; place in oven and bake for 20 minutes or until cornbread is done. |
